We are a Fife distillery that builds on malt whisky tradition, while actively exploring and pushing the limits of Scotch whisky. From grain to bottle, we take an innovative approach to flavour, and engineer our whiskies with a strong purpose: to excite palates.
New Realms of Flavour
Our whisky making process utilises types of grain other distilleries struggle to process.
The InchDairnie Distillery was literally built around our mash filter, which was installed before the walls and roof were built. This unusual system allows us to extract not only more flavour but also more sugar, and it can handle a variety of types of grain.
By combining the mash filter, a fermentation process that is reflective of the season, and stills that allow the complex flavours to come through, we can open up new corners of the flavour map, not yet reached by other distilleries.
